Polenta Cups with Sweet Peppers, Manchego, and Almonds and a Sparkling Grapefruit cocktail
One of the best parts about cocktail parties is feeling like everything is specially made just for you. Little bite sized meals are placed on small plates or napkins and you don’t have to share them with anyone. Every little crumb is all yours. To go along with these beautiful little bites, I created this Sparkling Grapefruit cocktail. It’s flavor is light and doesn’t compete with the food and it’s color is so festive and fresh. This cocktail is also easy to make for large groups and can be served in a punch bowl.
This combination is perfect for the holidays. I hope you will give both of the recipes a try! The Sparkling Grapefruit would be especially festive for New Year’s.
Sparkling Grapefruit
Makes 6 servings
1 cup freshly squeezed grapefruit juice
12 oz. gin
12 oz. ginger ale
2 oz. Grand Marnier
ice
grapefruit slices
Combine the ingredients in a punch bowl or large pitcher. Place a bucket of ice to the side rather than in the bowl where it would dilute the cocktail. If serving in a punch bowl, be sure to have a ladle available. Garnish with grapefruit slices.
