Raspberry Sorbet and Lemon Wafer sandwiches

Is anyone out there scared of dessert? Every time I hear someone say they are terrified of making dessert, I have to chuckle a little bit. For me, dessert can be one of the easiest things in the world to whip up. Granted, you have to be OK with using store bought ingredients. I find that if you balance store bought ingredients with something fresh, the possibilities for delicious, impressive desserts are endless.

These cute little sandwiches are a perfect example. The gentle sweet flavor of the raspberry sorbet and the tartness of the lemon cookies is perfectly balanced with small leaves of mint. With only 10 minutes of prep time, this is a wonderful dessert to make in the summer when it’s too hot to bake! I made them for my in-laws the other night and they were a big hit. Whew!

Raspberry Sorbet and Lemon Wafer Sandwiches

Makes 15-20 teeny tiny sandwiches

1 box of lemon wafers (vanilla wafers will work too)

1 pint Raspberry Sorbet

Mint leaves

In a pan, arrange the cookies, bottom side up, in a single layer. Using a small ice cream scoop or spoon, place about 2 tablespoons of sorbet on top of each cookie. Top the sorbet with a mint leaf and sandwich with a second cookie. Place in the freezer for 15 or 20 minutes. Arrange on a serving plate, garnish with mint leaves, and serve immediately before they melt! Enjoy! (I told you it was easy!)
