However, the sunshine we have had has been hot and the air has been humid. Perfect weather for a Margarita!
This recipe is a little different. As I have mentioned before, I have a member of my family who requires a strict diet. Because of this, she cannot drink margaritas. (The horror!) So, I began brainstorming a way to get around this bump in her road.
By using fresh squeezed juice from limes, lemons and oranges, I was able to make a tasty homemade margarita mix sweetened with honey instead of sugar. I have to say that these turned out surprisingly well! Even if you aren’t on a strict diet, I would encourage you to give this a try!

Tokyo Terrace Margarita
Makes 2 Margaritas
Juice of 2 lemons
Juice of 1 orange
Juice of 1 lime
1 1/2 tablespoons honey
4 shots of tequila
Margarita salt
Combine the juices from the lemons, orange and lime in a pitcher. Whisk in the honey. Add the tequila.
If you would like salt, rim the glass with some lime juice using a lime wedge and dip the rim of the glass in the salt.
Fill two glasses with ice and fill with the Margarita mixture. Garnish with lime slices or wedges.
