Cocktail Friday: Margaritas!

by Tokyo Terrace on June 27, 2009

What a week! It has been storming like crazy in Colorado. The wettest June since 1870-something…

However, the sunshine we have had has been hot and the air has been humid. Perfect weather for a Margarita!

This recipe is a little different. As I have mentioned before, I have a member of my family who requires a strict diet. Because of this, she cannot drink margaritas. (The horror!) So, I began brainstorming a way to get around this bump in her road.

By using fresh squeezed juice from limes, lemons and oranges, I was able to make a tasty homemade margarita mix sweetened with honey instead of sugar. I have to say that these turned out surprisingly well! Even if you aren’t on a strict diet, I would encourage you to give this a try!

Happy Friday everyone! And don’t forget to enter the Tokyo Terrace Giveaway! It ends on Monday June 29!

Tokyo Terrace Margarita

Makes 2 Margaritas

Juice of 2 lemons

Juice of 1 orange

Juice of 1 lime

1 1/2 tablespoons honey

4 shots of tequila

Margarita salt

Combine the juices from the lemons, orange and lime in a pitcher. Whisk in the honey. Add the tequila.

If you would like salt, rim the glass with some lime juice using a lime wedge and dip the rim of the glass in the salt.

Fill two glasses with ice and fill with the Margarita mixture. Garnish with lime slices or wedges.

Enjoy the weekend!
