Cocktail Fraturday…? The Better Late Than Never Shibuya Punch

OK. I have to apologize for being irresponsible with my blog posts. Being away from my normal routine in Tokyo has made it somewhat difficult to keep to my blogging schedule. Cocktail Friday this week, as a result, as been delayed to today. Actually, tonight…

IMG_9942Denver was very warm and sunny yesterday. One of the nicest days we have had since we arrived. To help cool down, this cocktail served us just fine. It is light, refreshing, and slightly tart. The mint and lime help to lighten the intense flavor of the pomegranate juice along with the bubbles of the tonic water that dance around playfully on the tongue.

This can be made with or without the alcohol. I chose to use vodka, but gin would work just as well. For Father’s Day, make one of these, sit back and relax.

Better Late Than Never Pomegranate-Mint Cocktail
Makes 1 serving

3 oz. Pomegranate juice
3 oz. Tonic water
2 oz. vodka or gin (optional)
1 teaspoon mint
1 tablespoon lime juice

In the bottom of a glass, muddle the mint and lime juice together. Fill the glass with ice, add the vodka or gin, pomegranate juice, and tonic water. Garnish with a sprig of mint and a lime wedge. Sip away!

    Hmm how about ‘Salsa in the Denver Sun’ or ‘Salsa on a Denver Terrace’ Just the colours reminded me of salsa sauce. Maybe totally unrelated but then thinking of Salsa dancing, hot sunny evenings…the mind wonders lol
