Hi Rachael!
bit of an old post, I know, but I wanted to get your thoughts on buying ramen in the US (that is, if you have any thoughts on buying in the US). I’ve looked quite a bit for packaged ramen that isn’t “instant” ramen along with the flavor packet, and I can’t find it. Now I’m not sure if I’m just supposed to be looking for a different name, like maybe there are a bunch of noodles with made alkaline salts under a variety of names and I just need to search for something other than “ramen” . . .
I’ve bought the sodium and potassium carbonate and made ramen myself a few times (momofuku recipe), and that’s fun and all, but it’d be nice to have a source for quality pre-made ramen for those times you don’t want to get out the pasta maker…
Got any tips? any links to share? or is instant ramen really all there is?
