Hi Rachael!
bit of an old post, I know, but I wanted to get your thoughts on buying ramen in the US (that is, if you have any thoughts on buying in the US). I've looked quite a bit for packaged ramen that isn't "instant" ramen along with the flavor packet, and I can't find it. Now I'm not sure if I'm just supposed to be looking for a different name, like maybe there are a bunch of noodles with made alkaline salts under a variety of names and I just need to search for something other than "ramen" . . .
I've bought the sodium and potassium carbonate and made ramen myself a few times (momofuku recipe), and that's fun and all, but it'd be nice to have a source for quality pre-made ramen for those times you don't want to get out the pasta maker...
Got any tips? any links to share? or is instant ramen really all there is?

This is such a great idea! I love noodles of all types, so this would be perfect for me. And what a fun surprise with the dessert! Great job with this challenge!

Your theme is awesome, it shows the versatility of the simple noodle. I'm mesmerized by the photos of your soba dish, the contrasting colors are beautiful. Good luck this week, voting for you!
